Last week I had a tour with Jolene whose ancestors were from Písařov, Šumperk district. She mentioned one of her favorite meals were fruit dumplings and I promised her to publish a recipe for these dumplings. So this is how I make them. :)
Ingredients for dough:
16 oz cottage cheese (tvaroh in Czech)
10 oz of all-purpose flour
2 egg yolks
1 spoon of sugar
pinch of salt
Inside:
whole strawberries/plums/apricots/cherries (pre-pitted) as filling
Sprinkle:
cottage cheese, icing sugar, melted butter
Mix all the dough ingredients together to create soft, smooth dough. Add flour or milk if needed - the amount of flour depends on the structure of the cottage cheese. Cut dough into small pieces, large enough to wrap around the fruit. Seal well all around.
Drop dumplings into the pot of boiling water and let them cook until they float on surface. Remove from water and sprinkle each portion with cottage cheese, icing sugar and melted butter.
Cooking tip: "Water waits for dumplings" - this means the water should be boiling before the dumplings are ready to be boiled. The dough takes in air humidity so it becomes sticky when left alone for too long.
